Because I've received so many email requests for the recipes that I mentioned in THIS post, I thought that I would share them here. :-) I love recipes...especially season specific recipes, and that is the main reason that I created the Recipe Box (see THIS post for the tutorial). It's the perfect size to hold favorite seasonal recipes (I plan on making one for each season).
Strawberry Spinach Salad (Perfect for the Spring & Summer)
1/3 c Sugar (more or less according to taste) 2 Tbsp White Wine Vinegar 1 1/2 tsp Olive oil 1 tsp Minced red onion 3/4 tsp Poppy seeds 1 1/2 tsp Toasted sesame seeds (just put regular sesame seeds in oven for a couple of minutes) 1/8 tsp salt Baby spinach Sliced fresh strawberries 2 Tbsp Toasted slivered almonds Craisins Combine the first seven ingredients in a glass jar and shake well. Toss spinach, strawberries, almonds, & Craisins together. Pour dressing over spinach and serve immediately. Pumpkin Chocolate Chip Cookies(perfect for the Autumn and Winter) 1 c Canned pumpkin 1 c Sugar 1/2 c Shortening 2 Tbsp Fresh Orange peel 2 c Flour 1 tsp Baking powder 1 tsp Baking Soda 1 tsp Cinnamon 1/4 tsp Salt 1 tsp Vanilla Chocolate Chips (I just eyeball it :-) Heat oven to 375 degrees Fahrenheit. Cream sugar and shortening together. Add in pumpkin, orange peel, and vanilla...mix well. In a separate bowl, sift together: flour, baking powder, baking soda, cinnamon, & salt. Slowly add to pumpkin mix. Stir until mixed well...but don't over mix. Stir in Chocolate Chips. Drop dough by spoonfuls (I use a cookie scooper) onto ungreased cookie sheets. Bake until light brown (8-10 minutes) and then immediately remove from cookie sheet onto wire cooling racks. I hope you enjoy these recipes! ~Laurie
